About Cafe Central

Café Central opened in 1918 in Juarez, Mexico, electrifying a clientele of gamblers and cabaret-goers who quickly grew to expect the finest culinary experience in the region at this chic night spot.


After Prohibition ended, Café Central migrated closer to the border, and finally crossed into downtown El Paso. It became known as Miguel’s Central Café, known as a uniquely El Paso dining experience.

In 1991, V. Trae Apodaca III and Michael Lynch became intrigued with the restaurant’s potential, as well as the need for a chic bistro downtown, for travelers and locals alike. He created an elegant black and cream interior to set off his collection of original art, and restored some of the Café’s old charm with an ornately gated New Orleans style courtyard.

By 2008, Alejandro Orozco, well known restaurateur, took over the ownership of the restaurant. Café Central’s charm and elegant ambiance is still one of its favorite characteristics making the restaurant among the favorites of the city and travelers. Today’s Café Central combines innovative taste with 96-year-old traditions.

Cocktail Server Models – Casting Call

Cafe Central Cocktail Server Models are an élite, experienced group of professional Servers who have an acute attention to detail, can be flexible and adjust to their surroundings, and are able to have fun and seem carefree in a very fast-paced environment. Servers are responsible for providing superior guest service to ensure that their all guests have an unforgettable experience.

Job Focus.
Focus is on, but not limited to the following:

  • The Cocktail Server Model is responsible for providing quality guest service while preparing and serving tableside beverages and, on occasion, food and amenities.
  • The Cocktail Server/ Model participates in in-house modeling programs, special events, Banquet service functions, and performs model/presenter tasks
  • Responsible for handling cash and credit card transactions at the Point of Sale system.
  • Provides timely cocktail service in a friendly and courteous manner.
  • Initiates and engages in conversation with all guests in a professional and friendly manner.
  • Must possess the ability to pour drinks and mix well-balanced cocktails and shots following standard recipes.
  • Acts as an ambassador of Café Central, marketing the restaurant and all products offered to the targeted customer base.
  • Collects customer information for the venue database, while constantly striving to increase the size of your personal clientele.
  • Meets marketing requirements established by management, as per the Company’s Marketing Requirement Plan.
  • Prepares all products according to established venue recipes, focusing on proper portion size control.
  • Exhibits and executes a complete knowledge of the venue’s sequence of service and selling technique.
  • Provides each customer with a properly itemized bill and secure payment according to established venue procedures.
  • Works with a sense of urgency to anticipate customer needs and assist other team members when the opportunity arises.
  • Communicates with management & service staff to rectify any and all customer needs, comments or incidents.
  • Ensures that assigned area, side station, tables and POS stations are clean and well stocked at all times.
  • Communicates and works with all support staff to ensure inventory is maintained at established par levels.
  • Adheres to all established policies, procedures and guidelines.

Desired Qualifications.

  • Minimum of 2 year work experience in restaurant or night life setting
  • Previous cocktail serving experience in a restaurant or night life environment preferred
  • Previous modeling experience preferred, but not required
  • Strong knowledge of spirits, wines, champagne and mixed cocktails
  • Must be able to mix well-balanced cocktails and shots following the Café Central mixology program
  • Must be able to communicate fluently with guests in English
  • Must present a professional and pleasant appearance that guests will find appealing and approachable in order to engage in conversation
  • Must possess excellent customer service and communication skills
  • Employee must meet social communication standards and requirements in promoting and marketing the restaurant
  • Basic knowledge of point of sales systems
  • Requires the ability to work within a team environment
  • Applicants must be at least 21 years of age
